A Mexican version of lasagna. It consists of layers of tortilla with a delicious mix of poblano peppers, chicken, onion and corn topped with a Mexican red sauce and finalized with a delicious layer of cream and cheese.
Learn to make Pastel Azteca from the newest member to our chef team, Ximena Castro. She studied culinary at Cordon Bleu in Mexico City and worked in the city’s upscale French cuisine restaurants before coming to Colorado with her family.
